High-Protein Pumpkin Chocolate Chip Cookies

Delicious fall cookies that are soft, chewy, and packed with protein from pumpkin and Greek yogurt, paired with rich dark chocolate.

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup Greek yogurt
  • 1 large egg
  • 1/2 cup vanilla protein powder
  • 1 cup oat flour
  • 1 teaspoon baking powder
  • 2 teaspoons pumpkin spice
  • 1 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix in a large bowl the pumpkin puree, Greek yogurt, and egg.
  3. Add in the protein powder and stir until fully combined.
  4. Incorporate the oat flour, baking powder, and pumpkin spice, folding them together gently.
  5. Fold in the dark chocolate chips.
  6. Scoop cookie dough onto a lined baking sheet, leaving space in between.
  7. Bake for 10-12 minutes until lightly golden.
  8. Cool for a few minutes before transferring to a cooling rack.

Notes

These cookies can be frozen for up to a month. Allow them to cool completely and store in an airtight container.
