Honey Lime Chicken Stack

A vibrant and flavorful dish that brings together honey, lime, and chicken in just 20 minutes.

  • 1.5 lbs Chicken Breast (Cut into 1-inch chunks)
  • 1/2 cup Honey (Liquid pure honey)
  • 1/3 cup Lime Juice (Freshly squeezed)
  • 1 tbsp Lime Zest (Grated finely)
  • 1/2 tsp Black Pepper (Freshly cracked flecks)
  • 1.5 cups White Rice (Long-grain)
  • 3 Avocados (Ripe, mashed)

Instructions

  1. Cook the Rice: Rinse 1.5 cups of white rice under cold water and bring 3 cups of water to a boil. Stir in the rinsed rice, cover, and reduce heat to low. Let it simmer for about 15 minutes or until absorbed.
  2. Prepare the Marinade: In a bowl, whisk together honey, lime juice, lime zest, and black pepper. Taste and adjust to preference.
  3. Marinate the Chicken: Toss the chicken chunks into the marinade, ensuring each piece is coated. Let sit for 5 minutes.
  4. Cook the Chicken: Heat a skillet over medium-high heat, add oil and cook the marinated chicken for about 6-7 minutes or until golden brown.
  5. Mash the Avocado: Mash the avocados in a bowl with a pinch of salt and a squeeze of lime juice.

Notes

For a healthier option, substitute chicken with turkey or tofu. Adjust sweetness and acidity in the marinade to taste.
