Sweet Potato Bread

A cozy and sweet bread made with mashed sweet potatoes, perfect for breakfast, snacks, or dessert.

  • 2 cups mashed sweet potatoes
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1/4 cup sugar for topping
  • 1 teaspoon cinnamon for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your sweet potatoes by cooking and mashing them.
  3. Mix the mashed sweet potatoes, vegetable oil, brown sugar, and sugar together in a bowl.
  4. Add the eggs and vanilla extract to the mixture and combine.
  5. Combine the dry ingredients in another bowl and whisk together.
  6. Fold the dry ingredients into the wet ingredients gently.
  7. Prepare a loaf pan by greasing it or lining it with parchment paper.
  8. Pour the batter into the pan and smooth the top.
  9. Mix the topping ingredients and sprinkle them over the batter.
  10. Bake for 60-70 minutes until a toothpick comes out clean.
  11. Cool in the pan for 10-15 minutes before transferring to a wire rack.

Notes

Serve warm with butter or honey. Adds a lovely touch to brunch!
