  • ¼ cup Pine Nuts
  • ½ cup Parmesan Cheese (grated)
  • ½ cup Olive Oil
  • 1 tablespoon Lemon Juice
  • Salt and Pepper (to taste)

Instructions

  1. Prepare the Basil: Wash fresh basil leaves thoroughly and pat dry.
  2. Toast the Pine Nuts: In a dry skillet over medium heat, toast pine nuts for 3-4 minutes until golden brown.
  3. Blend the Ingredients: In a food processor, combine basil, garlic, toasted pine nuts, and Parmesan. Pulse until well-blended.
  4. Add Olive Oil: While blending, slowly drizzle in olive oil until creamy.
  5. Season and Taste: Add lemon juice, salt, and pepper. Adjust flavors as desired.
  6. Cook the Pasta: Boil salted water and cook pasta according to package directions until al dente.
  7. Combine Pasta and Pesto: Mix drained pasta with pesto and reserved pasta water until creamy.
