Kale Apple and Walnut Salad

A vibrant salad that combines crunchy kale, juicy apples, and toasted walnuts with a zesty vinaigrette.

Ingredients

  • 2 cups kale, chopped
  • 1 apple, sliced (preferably Honeycrisp or Granny Smith)
  • 1/2 cup walnuts, toasted
  • 1/4 cup feta cheese (optional)
  • 1/4 cup dried cranberries
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper, to taste

Instructions

  1. Prep the Kale: Start by washing the kale leaves under cool water to remove any grit. Pat them dry with a clean kitchen towel. Remove the tough stems and chop the leaves into bite-sized pieces.
  2. Massage the Kale: In a large bowl, add the chopped kale and drizzle with a bit of olive oil (about 1 teaspoon). Using your hands, massage the kale for a couple of minutes.
  3. Toast the Walnuts: Heat a dry skillet over medium heat. Once it’s hot, add the walnuts and toast them for about 3-5 minutes, tossing frequently until golden brown.
  4. Prepare the Dressing: In a small bowl, combine the remaining olive oil, apple cider vinegar, a pinch of salt, and freshly cracked pepper. Whisk until well blended.
  5. Assemble the Salad: Add the sliced apple and dried cranberries to the massaged kale, followed by the toasted walnuts and feta cheese (if using). Drizzle the dressing over the salad and gently toss until all ingredients are coated.
  6. Serve and Enjoy: Transfer the salad to a large serving bowl or individual plates. Sprinkle with additional salt and pepper if desired.

Notes

This salad can be prepared a few hours in advance, just wait to add the apples until serving.
