Lemon Blueberry Cheesecake Cookies

Delicious cookies filled with a creamy cheesecake center, fresh blueberries, and zesty lemon flavor.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 cup blueberries (fresh or frozen)
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened unsalted butter, granulated sugar, and brown sugar together until light and fluffy.
  3. Add the egg and 2 teaspoons of vanilla extract and mix until combined.
  4. Combine the all-purpose flour, baking soda, and salt in a separate bowl, then add to the wet ingredients in batches.
  5. Add the lemon zest, lemon juice, and blueberries, folding gently.
  6. Make the cream cheese filling by whipping together the softened cream cheese, powdered sugar, and 1 teaspoon of vanilla extract.
  7. Form the cookies by scooping a tablespoon of dough, flattening it, adding a teaspoon of filling, and encasing it.
  8. Bake for 12-14 minutes until edges are golden.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Serve warm with tea or a chilled glass of lemonade. Can freeze baked cookies in an airtight container.
