  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • Frosting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the flour, baking powder, baking soda, and salt in a bowl.
  3. Cream the butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each.
  5. Incorporate the buttermilk, lemon zest, and lemon juice.
  6. Combine the dry ingredients with the wet ingredients and gently fold in the blueberries.
  7. Pour the batter into the muffin cups about 2/3 full.
  8. Bake for about 18 to 22 minutes until a toothpick comes out clean.
  9. Cool the cupcakes in the tin for 5 minutes, then transfer to a wire rack.
