  • 2 teaspoons baking powder

  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg

  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • 1/4 cup streusel topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line your muffin tin with paper liners or spray with cooking spray.
  3. Whisk together the flour, sugar, baking powder, and salt in a mixing bowl.
  4. Beat together the milk, vegetable oil, egg, vanilla extract, lemon zest, and lemon juice in another bowl.
  5. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for about 20-25 minutes until golden brown.
  8. Remove from the oven and cool in the tin for about five minutes before transferring to a wire rack.

Notes
