Lemon Pizza

A refreshing twist on classic pizza featuring zesty lemon and aromatic herbs, perfect for elevating weeknight dinners.

Ingredients

  • 1 ball Easy pizza dough (or store-bought dough)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 5 oz (150 grams) fresh mozzarella
  • 1 tablespoon lemon juice (for drizzling)
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon fresh parsley (for garnish)
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 475°F (245°C).
  2. Prepare your dough by letting it sit at room temperature for 30 minutes and then rolling it out.
  3. Add 1 tablespoon of olive oil onto the shaped dough.
  4. Mix together remaining olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and black pepper in a small bowl.
  5. Spread the mixture evenly over the dough.
  6. Layer the cheese over the dough.
  7. Sprinkle grated parmesan on top.
  8. Bake for 10-15 minutes until the cheese is bubbly and crust is golden.
  9. Drizzle with lemon juice when done.
  10. Garnish with fresh parsley and additional black pepper before serving.

Notes

Serve with a light salad or grilled vegetables for a complete meal.
