Loaded Taco Potato Soup

A hearty and flavorful soup combining ground beef, potatoes, and taco seasoning for a comforting meal.

  • 1 lb Ground Beef
  • 2 cups Potatoes, diced (Yukon Gold or Russets)
  • 2 tbsp Taco Seasoning
  • 1 cup Cheddar Cheese, shredded
  • 4 cups Chicken or Beef Broth
  • Optional Toppings: sour cream, diced avocados, sliced jalapeños, cilantro

Instructions

  1. Brown the ground beef in a large pot over medium heat with a drizzle of olive oil, seasoning with salt until no longer pink.
  2. Add the diced potatoes and stir for a couple of minutes.
  3. Season the mixture with taco seasoning and mix well.
  4. Pour in the broth and bring to a simmer; cook for about 20 minutes until potatoes are fork-tender.
  5. Add the cheddar cheese and stir until melted.
  6. Finish by checking the consistency and ladling into bowls topped with your favorite garnishes.

Notes

For a vegetarian version, substitute ground beef with black beans or lentils. Adjust the spices to taste for a spicier kick.
