  • 1/4 tsp salt
  • 1 cup mango pulp (fresh or canned)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup lemon juice
  • 1/4 tsp turmeric (for color)
  • 1/2 cup raspberries (for swirl)

Instructions

  1. Preheat the oven: First things first—preheat your oven to 350°F (175°C).
  2. Prepare your pan: Grab an 8-inch square baking dish and line it with parchment paper.
  3. Make the crust: Combine flour, butter, powdered sugar, and salt until it resembles coarse crumbs.
  4. Press and bake: Pour the mixture into the prepared pan, press evenly, and bake for 15-20 minutes.
  5. Prepare the mango curd: Whisk together mango pulp, sugar, eggs, lemon juice, and turmeric until smooth.
  6. Add to the crust: Pour the mango curd mixture over the baked crust.
  7. Swirl in the raspberries: Drop spoonfuls of raspberry puree on top and swirl gently.
  8. Bake again: Bake for another 15-20 minutes or until the curd is just set.
  9. Cool and cut: Let cool on a wire rack before slicing into squares.
  10. Enjoy: Serve chilled with a dusting of powdered sugar or whipped cream.
