  • ½ cup sun-dried tomatoes
  • 2 cups fresh spinach
  • 4 cloves garlic, minced
  • 1 cup Parmesan cheese, grated
  • 1 cup heavy cream
  • 4 cups chicken broth

Instructions

  1. Prep your ingredients by chopping the chicken into bite-sized pieces.
  2. Sauté the garlic in olive oil for about 1-2 minutes until fragrant.
  3. Add chicken pieces and cook for about 5-7 minutes until browned.
  4. Introduce the sun-dried tomatoes and stir to blend flavors.
  5. Pour in the chicken broth and bring to a gentle simmer for 5 minutes.
  6. Add the fresh spinach and cook until wilted, about 2-3 minutes.
  7. Lower the heat and gradually stir in the heavy cream.
  8. Finish by mixing in the grated Parmesan cheese until melted. Season with salt and pepper to taste.

Notes

This soup freezes beautifully; just cool completely before storing. Feel free to substitute spinach with kale or leave it out entirely.
