Cowboy Caviar

A vibrant and flavorful dip perfect for gatherings, packed with black beans, corn, and fresh vegetables.

Ingredients

  • 1 tablespoon avocado oil (or light-tasting olive oil)
  • 3 tablespoons fresh lime juice
  • 1 clove garlic (finely minced)
  • ½ teaspoon chili powder
  • ¼ teaspoon cumin
  • Salt and black pepper to taste
  • 1 (15.5-ounce) can black beans (drained and rinsed)
  • ½ cup corn (frozen (thawed), fresh, or canned (drained))
  • ½ cup diced cucumbers (partially peeled and seeds removed if needed)
  • ½ cup diced tomatoes (seeds removed)
  • ½ cup diced bell pepper (any color)
  • ¼ cup finely diced red onion
  • 2 tablespoons finely diced jalapeño peppers (seeds and ribs removed, optional)
  • ¼ cup chopped fresh cilantro (optional)

Instructions

  1. Prep Your Ingredients: Start by dicing your veggies and mincing the garlic.
  2. Whisk the Dressing: In a medium mixing bowl, combine avocado oil, lime juice, minced garlic, chili powder, cumin, and a pinch of salt and pepper. Whisk until emulsified.
  3. Combine the Ingredients: In a large bowl, add black beans, corn, cucumbers, tomatoes, bell pepper, red onion, and jalapeño. Drizzle dressing over and gently fold together.
  4. Taste and Adjust: Give the Cowboy Caviar a taste and adjust seasoning as needed.
  5. Chill (Optional): Let it chill in the fridge for 30 minutes to meld flavors.
  6. Garnish and Serve: Sprinkle cilantro over the top and serve with tortilla chips or veggie sticks.
