Fresh Cowboy Caviar Dip

A vibrant and fresh dip perfect for gatherings, packed with flavor and nutrition.

  • For the Dressing:
  • ⅓ cup olive oil
  • ⅓ cup white wine vinegar
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Juice of ½ a lime
  • 1 teaspoon salt
  • 1 tablespoon sugar (optional)
  • For the Cowboy Caviar:
  • 1 pound Roma tomatoes, seeded and diced
  • 1 (15-ounce) can black-eyed peas, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (11-ounce) can super sweet corn, drained
  • 1 red onion, diced
  • 1 cup red bell pepper, diced
  • 1 cup fresh cilantro, chopped

Instructions

  1. Prepare your ingredients: Gather all the ingredients, wash and chop your veggies.
  2. Make the dressing: In a bowl, combine olive oil, white wine vinegar, chili powder, cumin, lime juice, salt, and optional sugar.
  3. Combine the Cowboy Caviar: In a large bowl, add tomatoes, black-eyed peas, black beans, corn, red onion, red bell pepper, and cilantro. Pour dressing over and gently fold.
  4. Taste test: Scoop a bite with a chip, adjust seasoning as needed.
  5. Let it chill: Cover and let it sit in the fridge for at least 30 minutes.
  6. Serve and enjoy: Present in a bowl with extra cilantro on top and serve with tortilla chips.

Notes

Great with tortilla chips or fresh veggies. Can customize with additional ingredients.
