These Buffalo Chicken Lettuce Wraps are light yet satisfying, packed with spicy goodness, crunchy veggies, and creamy dressing, perfect for a laid-back dinner or impressive appetizer.

Ingredients

  • 2 large chicken breasts (cooked and shredded)
  • 2 tablespoons butter
  • ½ tablespoon olive oil
  • ½ cup Franks Red Hot Wing Sauce
  • ½ teaspoon celery seed
  • Fresh pepper to taste
  • ½ cup thinly sliced celery
  • Blue cheese crumbles
  • Ranch dressing
  • 2 heads of lettuce (romaine or iceberg, rinsed and patted dry)

Instructions

  1. Cook and shred the chicken.
  2. Heat the butter and olive oil in a skillet.
  3. Add the sauce, celery seed, and pepper; stir until simmering.
  4. Combine the shredded chicken with the sauce until well coated.
  5. Prepare the lettuce wraps by peeling off large leaves.
  6. Assemble the wraps with chicken, celery, blue cheese, and ranch dressing.

Notes

For extra flavor, use leftover rotisserie chicken. Adjust spice levels with more or less hot sauce to taste.
