2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup sugar
3 (8 oz) packages cream cheese, softened
1 cup sugar
3 large eggs
1 teaspoon vanilla extract
2 cups apples, peeled and sliced
1 teaspoon cinnamon
1/2 cup brown sugar
1 cup rolled oats
1/2 cup flour
1/4 cup butter, softened
Instructions
Preheat your oven to 325°F (160°C).
In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are fully coated and resemble wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for about 8–10 minutes until golden.
In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and fluffy. Gradually add in the sugar, continuing to mix. Next, add the eggs one at a time, ensuring to mix well after each addition. Stir in the vanilla extract until just combined.
In another bowl, toss your apple slices with cinnamon and brown sugar.
Pour half of the cheesecake batter over the pre-baked crust. Layer on the apple mixture, followed by the remaining cheesecake batter.
In a separate bowl, combine oats, flour, brown sugar, and softened butter. Mix until crumbly. Spread over the top of the cheesecake.
Place the springform pan on a baking sheet and bake for 55–60 minutes.
Let the cheesecake cool in the pan for about an hour, then refrigerate for at least 4 hours, preferably overnight.
Notes
Serve with whipped cream, ice cream, or caramel sauce for added indulgence.
