  • 1/2 cup brown sugar
  • 1 tablespoon baking powder

  • 1/2 cup unsalted butter (melted)
  • 1 cup buttermilk
  • 2 large eggs
  • 2 cups diced apples
  • 1/2 cup rolled oats
  • 1/4 cup chopped nuts (optional)
  • 1/2 cup crumb topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a 12-cup muffin tin with liners or grease it.
  3. Mix the dry ingredients in a bowl: flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Combine the wet ingredients: whisk together melted butter, buttermilk, and eggs in another bowl.
  5. Fold in the diced apples and rolled oats into the wet mixture.
  6. Combine the wet and dry ingredients, gently folding until just mixed.
  7. Optional: Mix the crumb topping ingredients together and sprinkle on top of the batter.
  8. Fill each muffin cup 2/3 full with batter.
  9. Bake for 18-20 minutes until a toothpick comes out clean.
  10. Cool for 5 minutes in the pan before transferring to a wire rack.
