  • 1 cup apples, diced
  • ½ cup walnuts, chopped
  • ½ cup celery, diced
  • ½ cup mayonnaise

Instructions

  1. Prepare the chicken: If you’re using leftover grilled or roasted chicken, simply chop it into bite-sized pieces. If you’re cooking chicken specifically for this dish, boil or sauté the chicken breasts in a skillet for about 15 minutes until cooked through.
  2. Chop it up: Dice your apples and celery into small pieces, and toss the diced apples with lemon juice to prevent browning.
  3. Toast the walnuts (optional): Toast your walnuts in a dry skillet over medium heat for about 3-5 minutes, tossing frequently.
  4. Mix it up: In a large bowl, toss together the cooked chicken, diced apples, celery, and walnuts. Add the mayonnaise and stir gently.
  5. Season to taste: Taste and season with salt and pepper according to your preference.
  6. Chill: Let your salad chill in the fridge for about 30 minutes to meld flavors.
