Autumn Harvest Pasta

A comforting pasta dish celebrating the warm flavors of autumn with roasted Brussels sprouts, tart cranberries, and crispy bacon.

Ingredients

Scale
  • 400 grams Pasta (farfalle or penne)
  • 400 grams Brussels Sprouts
  • 200 grams Bacon
  • 150 grams Fresh Cranberries
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic (minced)
  • 100 grams Parmesan Cheese (grated)

  4. Sauté the halved Brussels sprouts in the bacon drippings for about 5 minutes until browned.
  5. Toss in the minced garlic and fresh cranberries, sautéing for another 2-3 minutes until fragrant.
  6. Add the cooked pasta to the skillet and mix well, adding reserved pasta water if needed.
  7. Stir in the grated Parmesan cheese and crispy bacon, seasoning with salt and pepper to taste.
  8. Remove from heat and serve the Autumn Harvest Pasta.
