  • 1 cup shredded cheese (cheddar or your choice)
  • 6 slices of cooked bacon, chopped
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup chopped green onions (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the muffin tin by greasing it with cooking spray or butter.
  3. Cook the bacon until crispy, then chop it and set aside.
  4. Whisk the eggs in a large bowl until well combined.
  5. Add milk, salt, and pepper to the eggs, whisking until blended.
  6. Mix in the cheese and bacon.
  7. Add the dry ingredients and fold gently until just combined.
  8. Pour the batter into the muffin cups, filling them about 2/3 full.
  9. Bake for 20-25 minutes or until golden brown.
  10. Cool for a few minutes before transferring to a wire rack.
