Bakery-Style Pumpkin Chocolate Chip Cookies

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons cornstarch
  • 1/2 cup extra chocolate chips (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the pumpkin puree, brown sugar, and egg in a large mixing bowl until smooth.
  3. Add the vanilla extract.
  4. In another bowl, whisk together the flour, cornstarch, baking soda, and pumpkin pie spice.
  5. Combine the dry ingredients with the wet ingredients until just mixed.
  6. Fold in the semi-sweet chocolate chips.
  7. Scoop the dough onto a lined baking sheet, spacing them apart.
  8. Top with extra chocolate chips.
  9. Bake for 12-15 minutes until edges are golden.
  10. Cool on a rack for 5 minutes before transferring.

Notes

For a vegan version, substitute the egg with a flax egg and use dairy-free chocolate chips.
