  • 2 to 3 ripe bananas, mashed
  • 1/2 cup melted butter
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch of salt
  • 1 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin with butter or muffin liners.
  3. Mash the bananas in a bowl until smooth.
  4. Mix in the melted butter and sugar until combined.
  5. Add the beaten egg and vanilla extract, stirring until incorporated.
  6. Incorporate the baking soda and salt into the mixture.
  7. Fold in the flour until just combined; do not overmix.
  8. Prepare the streusel by mixing brown sugar, cinnamon, oats, and a bit of flour, then cutting in melted butter.
  9. Fill the muffin cups with batter and sprinkle with streusel topping.
  10. Bake for 18–20 minutes until golden brown and a toothpick comes out clean.
  11. Cool in the tin for 5 minutes before transferring to a wire rack.

Notes
