Cowboy Caviar Dip

A vibrant, crowd-pleasing Cowboy Caviar Dip loaded with beans and vegetables, perfect for gatherings.

  • 1 can black-eyed peas
  • 1 can sweet corn
  • ½ cup red bell pepper, diced
  • ½ cup green bell pepper, diced
  • ½ cup red onion, diced
  • ¼ cup cilantro, chopped
  • ⅓ cup extra virgin olive oil
  • 3 tablespoons white wine vinegar
  • 2 tablespoons lime juice
  • 1 tablespoon maple syrup
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon ground pepper
  • ½ teaspoon salt

Instructions

  1. Rinse the beans and corn in a colander.
  2. Chop the red bell pepper, green bell pepper, and red onion into bite-sized pieces.
  3. Chop the cilantro and set aside.
  4. Make the dressing by whisking together olive oil, white wine vinegar, lime juice, maple syrup, garlic powder, cumin, chili powder, ground pepper, and salt.
  5. Combine the rinsed beans, corn, chopped vegetables, and cilantro in a large mixing bowl.
  6. Drizzle the dressing over the mix and toss gently.
  7. Chill for at least 30 minutes to let flavors meld together.
  8. Taste before serving and adjust seasoning as necessary.
  9. Serve the dip in a bowl, optionally garnished with cilantro or lime.

Notes
