  • 2 large eggs
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

  • ¼ teaspoon black pepper
  • 1 cup shredded mozzarella cheese (for topping)
  • Optional: fresh parsley or basil for garnish

Instructions

  1. Prep your zucchini: Preheat your oven to 400°F (200°C). Grate the zucchinis using a box grater or food processor. Sprinkle with salt and let sit for 10 minutes, then squeeze out excess moisture.
  2. Mix ingredients: In a large mixing bowl, combine the grated zucchini, eggs, shredded mozzarella, grated Parmesan, garlic powder, Italian seasoning, salt, and black pepper. Use your hands to ensure everything is well combined.
  3. Prepare the baking dish: Line a baking sheet with parchment paper and spread the mixture into a rectangular shape, about ½ inch thick.
  4. Bake the base: Bake in the preheated oven for 20-25 minutes until lightly golden on top.
  5. Add the topping: Sprinkle the extra cup of shredded mozzarella on top and optionally add Italian seasoning.
  6. Final bake: Return to the oven and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
  7. Cool and slice: Let the breadsticks cool for a few minutes, then slice into desired shapes.

Notes

Squeeze out all moisture from the zucchini to avoid sogginess. Serve with marinara or your favorite dip.
