Deliciously satisfying and wonderfully light zucchini fritters, perfect for a summer evening!

Ingredients

  • 2 medium zucchini, grated
  • 1 cup Parmesan cheese, grated
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Prep the Zucchini: Start by grating the zucchini and squeezing out excess moisture.
  2. Mix the Ingredients: In a large bowl, combine the zucchini, cheeses, flour, eggs, and seasonings.
  3. Heat the Oil: Heat about 1/4 inch of oil in a skillet over medium heat.
  4. Drop the Fritters: Scoop tablespoons of the mixture into the hot oil, taking care not to overcrowd the pan.
  5. Fry Until Golden: Fry for 3-4 minutes on each side until golden brown, then transfer to a paper towel-lined plate.
  6. Serve and Enjoy: Serve warm with a dollop of sour cream, herbs, or your favorite sauce.

Notes

For a healthier option, you can bake the fritters at 400°F (200°C) for about 20 minutes.
