French Onion Grilled Cheese

A cozy take on the classic grilled cheese sandwich, featuring caramelized onions and melted Gruyère cheese.

  • 2 slices thick-cut sourdough bread (or any preferred bread)
  • 2 medium-sized onions, thinly sliced
  • 2 tablespoons butter, plus more for spreading
  • 1/3 cup Gruyère cheese, shredded
  • Salt, to taste
  • Garlic powder (optional, for extra flavor)

Instructions

  1. Caramelize the onions: In a skillet, melt 2 tablespoons of butter over medium heat. Add the onions and a pinch of salt. Cook slowly for about 20-25 minutes until golden brown and caramelized.
  2. Prepare the bread: Lay out the slices on a clean surface and spread softened butter on one side of each slice.
  3. Assemble the sandwich: On the unbuttered side of one slice, layer the caramelized onions followed by Gruyère cheese. Top with another slice of bread, buttered side up.
  4. Cook it up: Heat your skillet over medium heat and place the sandwich in it. Cook until the bottom is golden brown, about 3-4 minutes.
  5. Melt and flip: Carefully flip the sandwich and cook for another 3-4 minutes until golden brown and the cheese is melted.
  6. Serve with style: Let the sandwich rest for a minute before slicing and serve with tomato soup or a salad.

Notes

For a vegan version, substitute butter with olive oil and use plant-based cheese.
