Fresh Corn Salad

A refreshing summer salad bursting with sweet corn, creamy avocado, and juicy cherry tomatoes, perfect for picnics and barbecues.

Ingredients

  • 3 cups fresh corn kernels
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped fresh cilantro
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your corn by slicing the kernels off the cob into a bowl.
  2. Chop your avocado and halved cherry tomatoes.
  3. Mix the corn, diced avocado, cherry tomatoes, and red onion in a large bowl.
  4. Add lime juice, olive oil, cilantro, salt, and pepper; gently toss to combine.
  5. Taste for seasoning and adjust if necessary.
  6. Let the salad rest for 10-15 minutes before serving.

Notes

Serve with grilled chicken or fish, or as a dip with tortilla chips. Can be customized with different ingredients.
