Pumpkin Stuffed Chocolate Chip Cookies

  • 2 ½ cups All-Purpose Flour
  • 1 cup Brown Sugar
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons Pumpkin Pie Spice
  • 1 teaspoon Baking Soda
  • 1 cup Semi-Sweet Chocolate Chips
  • ½ cup Chocolate Spread Filling

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. Mix the flour, baking soda, and pumpkin pie spice in a medium bowl. Set aside.
  3. Cream the butter and brown sugar in a large bowl until light and fluffy.
  4. Add the egg and vanilla extract to the mixture and beat until well combined.
  5. Incorporate the pumpkin puree until fully combined.
  6. Combine the flour mixture gradually, mixing until just combined and fold in the chocolate chips.
  7. Create rounded tablespoons of dough, fill with chocolate spread, and seal with more dough.
  8. Bake for 10-12 minutes until edges are set and tops are golden.
  9. Cool for 5 minutes before transferring to wire racks.

Notes

For a gluten-free version, use a gluten-free flour blend. You can also customize the filling using peanut butter or caramel.
