Greek Cucumber Tomato Feta Salad

A vibrant and refreshing salad that transports you to the Mediterranean with its crisp cucumbers, juicy tomatoes, and rich feta.

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste
  • Fresh parsley or oregano for garnish (optional)

Instructions

  1. Prepare the ingredients by washing the cherry tomatoes and cucumbers under cold water. Halve the cherry tomatoes and dice your cucumber.
  2. Crumble the feta cheese in a small bowl with your fingers.
  3. Make the dressing by whisking together the olive oil, red wine vinegar, salt, and pepper in a separate bowl.
  4. Combine the halved cherry tomatoes, diced cucumber, and crumbled feta in a large mixing bowl, then pour the dressing over the top and gently mix.
  5. Let the salad rest for about 15-20 minutes before serving to allow flavors to meld.
  6. Garnish with fresh parsley or oregano before serving.
