Greek Meatball Bowl

A delightful Greek Meatball Bowl featuring tender meatballs, refreshing tzatziki, and fresh veggies over a fluffy bed of rice or quinoa.

  • 1 pound ground beef or lamb
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg
  • 1 cup tzatziki sauce
  • 2 cups cooked rice or quinoa
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the ground beef or lamb, breadcrumbs, Parmesan, minced garlic, oregano, salt, pepper, and egg in a mixing bowl until just combined.
  3. Form small meatballs (about the size of a golf ball) and place them on a lined baking sheet.
  4. Bake for 20-25 minutes, or until cooked through and golden brown.
  5. Prepare rice or quinoa according to package instructions.
  6. Assemble each bowl starting with rice or quinoa, then add meatballs on top.
  7. Add diced cucumber, halved cherry tomatoes, and sliced red onion.
  8. Drizzle tzatziki sauce over the meatballs and veggies.
  9. Garnish with extra Parmesan or fresh herbs if desired.

Notes

For a vegan option, substitute the meat with a mix of lentils, chickpeas, and quinoa. Leftover meatballs can be stored in the fridge or frozen.
