The Ultimate Greek Pasta Salad

A vibrant and delicious Greek Pasta Salad packed with fresh ingredients and Mediterranean flair.

  • 8 oz Pasta (Rotini or Penne)
  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Kalamata Olives, pitted and sliced
  • 1 cup Feta Cheese, crumbled
  • 1/4 Red Onion, finely chopped
  • 1 Cucumber, diced
  • 1/4 cup Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • 1 teaspoon Dried Oregano
  • Salt and Pepper to taste
  • Fresh Parsley for Garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, then add the pasta. Cook according to package instructions until al dente. Drain and rinse under cold water.
  2. Prep Your Veggies: While your pasta cooks, chop the cherry tomatoes, dice the cucumber, finely chop the red onion, and slice your Kalamata olives.
  3. Crumbled Feta, Please: In a separate bowl, crumble the feta cheese.
  4. Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, and a pinch of salt and pepper.
  5. Combine It All: In a large mixing bowl, add the cooked pasta, chopped vegetables, and crumbled feta. Pour over the dressing and toss gently to combine.
  6. Taste Test Time: Give your Greek Pasta Salad a taste! Adjust seasoning if needed.
  7. Chill Out: For the best flavor, let your salad chill in the fridge for at least 30 minutes.

Notes
