Tzatziki Chicken Salad

A light and refreshing chicken salad featuring shredded rotisserie chicken and tangy tzatziki sauce, perfect for summer gatherings.

Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 cup tzatziki sauce
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste
  • Optional add-ons: black olives, crumbled feta cheese, or creamy avocado

Instructions

  1. Shred the chicken into bite-sized pieces.
  2. Prep the veggies: dice the cucumber, halve the cherry tomatoes, and finely chop the red onion.
  3. Mix in a large serving bowl the shredded chicken, diced cucumber, cherry tomatoes, and red onion.
  4. Add the tzatziki sauce and fold it in until all ingredients are coated.
  5. Season with salt and pepper, adjusting to taste.
  6. Add fresh herbs and gently fold them in.
  7. Chill in the fridge for at least 15 minutes if not serving immediately.
  8. Serve in bowls or on a platter, with optional toppings if desired.
