  • 1 pound Flank, Ribeye, or New York Strip
  • 2 medium Zucchini
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 tablespoon Dijon Mustard
  • 1 cup Sour Cream or Greek Yogurt
  • 2 tablespoons Fresh Herbs (Chives or Parsley)
  • 2 cups Cooked Rice or Mashed Potatoes

Instructions

  1. Marinate the Steak: In a mixing bowl, combine the olive oil, garlic powder, onion powder, and Dijon mustard. Whisk until well blended, then rub this marinade over your steak and let it marinate for at least 30 minutes.
  2. Prep the Grill: Preheat your grill to medium-high heat (around 400°F is ideal).
  3. Grill the Zucchini: Slice your zucchini and toss them in olive oil, salt, and pepper. Grill for about 3–4 minutes on each side until tender.
  4. Cook the Steak: Place the marinated steak on the grill and cook for 4–5 minutes per side for medium-rare. Use a meat thermometer to check doneness.
  5. Prepare the Sauce: Mix sour cream (or yogurt) with fresh herbs, salt, and pepper in a bowl, adjusting to taste.
  6. Assemble Your Bowls: Start with a base of cooked rice or mashed potatoes, layer sliced steak, grilled zucchini, and drizzle with sauce.
  7. Final Touches: Add extra herbs and cherry tomatoes for color, then serve hot.
