Spook-tacular Halloween Pasta Salad

A fun and flavorful Halloween pasta salad featuring colorful veggies and a tangy dressing, perfect for potlucks and parties.

  • 1 lb Halloween Pasta
  • 1/2 Red Onion (finely chopped)
  • 3/4 Cup Rainbow Carrots (sliced into rounds)
  • 1 Cup Spinach (chopped)
  • 1/4 Cup Extra Virgin Olive Oil
  • 2 Tbs Red Wine Vinegar
  • 1 Tsp Brown Mustard
  • 1/2 Tsp Maple Syrup
  • 1/4 Tsp Dried Sage
  • 1/4 Tsp Dried Oregano
  • 1/4 Tsp Dried Thyme
  • Salt + Pepper (to taste)

Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a boil and add the Halloween pasta. Cook according to package instructions until al dente.
  2. Prep the Veggies: Chop your red onion, rainbow carrots, and spinach.
  3. Whisk the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, brown mustard, maple syrup, sage, oregano, thyme, and a pinch of salt and pepper.
  4. Combine Pasta and Veggies: Drain the pasta and rinse it under cold water. Toss it into a large bowl with your chopped veggies.
  5. Dress It Up: Pour the dressing over the pasta and veggies, and give everything a gentle toss.
  6. Let It Chill: If possible, let your salad chill in the fridge for about 30 minutes before serving.

Notes

Consider adding grilled chicken or chickpeas for extra protein. You can also substitute spinach with arugula or kale.
