Celebrate Halloween with these colorful and customizable rice bowls packed with delicious flavors and festive spirit.

  • 2 cups Cooked Brown or White Rice
  • 1 can Black Beans
  • 2 medium Roasted Sweet Potatoes
  • 1 cup Diced Bell Peppers (red, orange, yellow)
  • 1 Avocado or Guacamole
  • 1 cup Corn Kernels
  • 1/4 cup Fresh Cilantro
  • 2 tbsp Lime Juice
  • Spooky Sauce (optional): plain yogurt, garlic, lime juice, and green food coloring

Instructions

  1. Prepare the Rice: In a pot, bring 2 cups of water to a boil. Add 1 cup of rice and a pinch of salt. Cover and reduce heat to low. Cook according to package instructions (15-20 minutes for white rice, 40-45 minutes for brown rice).
  2. Roast the Sweet Potatoes: Preheat oven to 425°F (220°C). Cube sweet potatoes, toss with olive oil, salt, and pepper, and roast for 25-30 minutes.
  3. Prep the Black Beans: Rinse and drain canned black beans or cook homemade beans with garlic powder and cumin.
  4. Sauté the Bell Peppers: Heat olive oil in a skillet, add diced bell peppers, and sauté for 5-7 minutes.
  5. Assemble the Bowls: Start with a scoop of rice, then add sweet potatoes, black beans, bell peppers, corn, and avocado.
  6. Drizzle with Spooky Sauce: Top with spooky sauce, fresh cilantro, and a squeeze of lime.
  7. Serve: Enjoy with fun sides like tortilla chips or a festive salad.
