Harvest Couscous Salad

Ingredients

Scale
  • 1 cup couscous
  • 2 cups fresh spinach
  • ½ cup dried cranberries
  • ½ cup chopped pecans
  • ¼ red onion, finely chopped
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar

  3. Chop the spinach and red onion into bite-sized pieces.
  4. Mix the fluffed couscous, spinach, chopped pecans, cranberries, and onion in a large bowl.
  5. Whisk together olive oil, apple cider vinegar, salt, and pepper in a small bowl.
  6. Dress the salad with the dressing and toss gently to coat.
  7. Let the salad rest for 10 minutes to allow flavors to meld.
  8. Serve the salad warm, at room temperature, or cold.
