Ingredients

  • 1 can Canned Tuna (in water or olive oil)
  • 1 ripe Avocado
  • 1 stalk Celery
  • 1/4 Red Onion
  • 2 tbsp Fresh Lemon Juice
  • 2 tbsp Chopped Fresh Herbs (like parsley or dill)
  • Salt and Pepper to taste
  • Mixed Greens (for serving, optional)

Instructions

  1. Open your canned tuna and drain it well.
  2. Prep the veggies by dicing celery and red onion.
  3. Mash the avocado in a medium bowl until creamy, leaving some chunks.
  4. Mix in the drained tuna, diced celery, red onion, and fresh herbs with the avocado.
  5. Squeeze in fresh lemon juice and season with salt and pepper, then stir gently.
  6. Taste the salad and adjust seasoning as needed.
  7. Chill the salad in the refrigerator for about 30 minutes.
  8. Serve it on a bed of greens or in avocado halves or whole-grain bread.

Notes
