Huckleberry Crumb Bars

Delightful Huckleberry Crumb Bars bursting with sweet and tangy flavors, perfect for any occasion!

  • 13/4 cups (225 grams) all-purpose flour
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 6 tablespoons (75 grams) granulated sugar
  • 1/4 cup (50 grams) light brown sugar
  • 12 tablespoons (169 grams) unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • 2 cups (300 grams) huckleberries
  • 1 tablespoon cornstarch
  • 1/2 cup (100 grams) granulated sugar
  • 1/8 teaspoon kosher salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare an 8×8-inch baking dish with parchment paper.
  3. Make the crumb mixture by combining flour, baking powder, salt, cinnamon, granulated sugar, and brown sugar in a large bowl.
  4. Incorporate the melted butter and vanilla extract into the dry ingredients until crumbly.
  5. Reserve approximately 1/2 cup of the crumb mixture for topping.
  6. Prepare huckleberry filling by tossing huckleberries with cornstarch, sugar, and salt in another bowl.
  7. Assemble the bars by pressing 2/3 of the crumb mixture into the bottom of the baking dish.
  8. Add the huckleberry mixture evenly over the crumb base.
  9. Finish with the reserved crumb mixture as a topping.
  10. Bake for 35-40 minutes until golden brown and bubbly.
  11. Cool completely in the dish, then lift out and slice into squares.

Notes

For a gluten-free version, substitute with a 1-to-1 gluten-free flour blend. You can also experiment with different berries and add nuts for extra crunch.
