Italian Wedding Soup

A heartwarming Italian Wedding Soup with savory turkey meatballs, vibrant spinach, and tender pasta in a deliciously warm broth.

  • 1 pound ground turkey
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan
  • 2 minced garlic cloves
  • 1 beaten egg
  • Salt and pepper to taste
  • Pinch of Italian herbs
  • Olive oil for cooking
  • 1 chopped onion
  • 2 chopped carrots
  • 2 chopped celery stalks
  • 6 cups chicken or vegetable broth
  • 1 cup small pasta (orzo, ditalini, or acini di pepe)
  • 3 cups fresh spinach
  • Lemon juice (optional, for serving)
  • Extra Parmesan and fresh herbs for garnish

Instructions

  1. In a large bowl, combine ground turkey, breadcrumbs, Parmesan, minced garlic, and beaten egg. Season with salt, pepper, and Italian herbs. Roll into 1-inch meatballs.
  2. Heat olive oil in a large pot over medium heat. Add meatballs and brown on all sides, about 5-7 minutes.
  3. Remove meatballs and sauté chopped onions, carrots, and celery in the same pot for about 5 minutes.
  4. Pour in chicken or vegetable broth and bring to a gentle simmer, scraping the pot for flavor.
  5. Stir in pasta and cook according to package instructions, around 8-10 minutes.
  6. Combine meatballs and spinach back into the pot. Simmer until spinach wilts and meatballs are thoroughly cooked (2-3 minutes).
  7. Taste the soup and adjust seasoning as necessary. Serve hot with additional Parmesan and fresh herbs.

Notes

For a vegetarian version, swap turkey meatballs for chickpea meatballs. This soup can be frozen, but add pasta separately when reheating.
