Jalapeno Peach Chicken Skewers

Juicy chicken thighs glazed with sweet peach preserves and fresh jalapenos, grilled to perfection.

Ingredients

  • 1 lb Chicken Breast, cut into cubes
  • 2 Ripe Peaches, cut into chunks
  • 2 Jalapenos, chopped
  • 1/4 cup Peach Preserves
  • 2 tablespoons Olive Oil
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • Skewers (soaked in water if wooden)

Instructions

  1. Prepare the Skewers: If you’re using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
  2. Marinade the Chicken: In a bowl, combine the olive oil, soy sauce, garlic powder, salt, and black pepper. Mix it well! Add your chicken cubes and stir until they are fully coated. Let this marinate for at least 15 to 30 minutes.
  3. Prepare the Peaches and Jalapenos: While the chicken is marinating, chop your jalapenos and slice up those beautiful peaches.
  4. Assemble the Skewers: Grab your soaked skewers and start with a chunk of chicken, then add a piece of peach followed by a jalapeno. Repeat until the skewer is almost full.
  5. Glaze with Peach Preserves: Brush some peach preserves over the assembled skewers.
  6. Grill Time! Preheat your grill to medium-high heat. Place the skewers directly on the grill and cook for about 12-15 minutes, turning halfway through.
  7. Finishing Touches: Once cooked, remove the skewers from the grill and let them rest for a few minutes.

Notes

For a beautiful presentation, garnish with fresh cilantro or mint.
