Maple Dijon Chicken Salad

A delightful salad combining savory, sweet, and tangy flavors with chicken, crisp greens, and a homemade maple Dijon dressing.

  • 4 cups mixed greens (romaine and baby spinach)
  • 1 medium apple (Honeycrisp or Fuji)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons pure maple syrup
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken: If using leftover chicken, shred it into bite-sized pieces. Otherwise, season chicken breasts with salt and pepper, grill or pan-sear until cooked through, then let it rest and slice thinly.
  2. Make the maple Dijon dressing: Combine Dijon mustard, maple syrup, olive oil, and apple cider vinegar in a small bowl and whisk until smooth.
  3. Assemble the salad: Toss together the greens, sliced apple, and chicken in a large bowl. Pour dressing over and gently toss to combine.
  4. Plate it up: Serve immediately in individual bowls or a large serving dish, topped with optional toasted nuts or seeds.

Notes
