  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup vegetable or chicken broth
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Prep your ingredients: Start by chopping all your vegetables and dicing the chicken.
  2. Heat the olive oil in a large skillet or pot over medium heat.
  3. Sauté the onion until translucent, about 3-4 minutes, then add the minced garlic for 30 seconds.
  4. Cook the chicken with salt, pepper, cumin, coriander, and paprika until cooked through, about 5-7 minutes.
  5. Add the bell pepper and zucchini, cooking for an additional 4-5 minutes.
  6. Pour in the broth, stirring to combine, and bring to a gentle simmer.
  7. Cook the couscous: Remove from heat, stir in the couscous, cover and let sit for 5 minutes.
  8. Fluff the couscous with a fork and garnish with fresh parsley.
  9. Serve with lemon wedges on the side.
