Pumpkin White Chocolate Chip Cookies

Deliciously soft and chewy cookies that combine the warm flavors of pumpkin with sweet white chocolate chips, perfect for autumn gatherings.

  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 1 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the pumpkin puree, brown sugar, egg, and vanilla extract in a large bowl until smooth.
  3. Combine the flour, pumpkin pie spice, and baking soda in another bowl.
  4. Bring the dry mixture into the wet mixture, stirring gently until just combined.
  5. Add in the semi-sweet and white chocolate chips, folding them into the dough.
  6. Scoop rounded balls of dough onto a lined baking sheet.
  7. Bake for about 12-15 minutes until edges are golden.
  8. Cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

These cookies can be frozen in dough form and baked directly from the freezer. For a vegan version, replace the egg with a flax egg and use vegan butter.
