Ultimate Blackberry Cobbler

A delightful dessert featuring sun-ripened blackberries beneath a golden buttery crust, perfect for summer gatherings or a sweet treat after a long day.

  • 2 cups fresh blackberries
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the fresh blackberries with 1/2 cup of sugar and the lemon juice in a medium mixing bowl. Let sit for about 15 minutes.
  3. Whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt in another bowl.
  4. Combine the milk, melted butter, and vanilla extract in a separate bowl. Stir until smooth.
  5. Pour the wet mixture into the dry ingredients. Gently stir until just combined.
  6. Grease a 9×9-inch baking dish with butter. Pour the batter into the dish and spread it out evenly. Spoon the blackberry mixture over the batter.
  7. Bake for 35-40 minutes or until the top is golden brown and a toothpick comes out clean.
  8. Let the cobbler cool for 10-15 minutes before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. Consider adding fresh mint leaves or powdered sugar for garnish.
