Mediterranean Chicken Zucchini Bake

  • 2 medium zucchinis, sliced
  • 2 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the chicken by seasoning with salt, pepper, oregano, and basil.
  3. Sauté the red onion and garlic in a skillet for 2-3 minutes.
  4. Mix in the zucchini and tomatoes, seasoning, and sauté for another 5-7 minutes.
  5. Assemble the bake by layering the veggies and placing chicken on top.
  6. Bake for 25-30 minutes until chicken is cooked through.
  7. Add feta for the last 5 minutes of baking.
  8. Finish by letting it rest before serving.
