Turkey Sweet Potato Hash

A hearty and comforting dish featuring ground turkey and sweet potatoes, perfect for any meal of the day.

Ingredients

Scale
  • 1 pound Ground Turkey
  • 2 medium Sweet Potatoes, peeled and diced
  • 1 cup Bell Peppers, diced
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste
  • Fresh Herbs, for garnish (optional)

Instructions

  1. Prep your ingredients by peeling and dicing the sweet potatoes into small cubes. Chop the bell peppers and onion.
  2. Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Once hot, add the ground turkey. Season with salt and pepper and cook until browned, about 5-7 minutes. Remove the turkey and set aside.
  3. Add the remaining olive oil to the skillet and toss in your sweet potatoes. Cook for about 10-12 minutes until golden brown and fork-tender.
  4. Add the chopped onion and bell peppers. Sauté until the onions are translucent and the peppers are soft, about 5-7 minutes.
  5. Incorporate the minced garlic and cook for another minute until fragrant.
  6. Combine the cooked turkey back into the skillet and mix everything well. Adjust seasoning as necessary.
  7. Serve the hash in a warm bowl or plate, garnished with fresh herbs if desired.

Notes

Great with a fried or poached egg on top or a sprinkle of feta for added creaminess.
