Easy Plum Crumble Bars

Delightful plum crumble bars bursting with sweet, juicy plums and topped with a buttery, crunchy crumble.

Ingredients

  • 8 medium plums (cut into chunks)
  • ½ cup light brown sugar
  • 1 tsp ground cinnamon
  • 1 star anise
  • 2 ½ cups jumbo rolled oats
  • 1 ¼ cups all-purpose flour
  • 1 cup butter (cut into cubes)
  • 1 cup light brown sugar (for the crumble)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking dish and lightly grease it.
  3. Make the plum filling by combining plums, ½ cup light brown sugar, cinnamon, and star anise in a bowl.
  4. Prepare the crumble by combining oats, flour, and 1 cup light brown sugar, and mixing in the cold butter.
  5. Assemble the layers by pressing half of the crumble mixture into the baking dish, then adding the plum filling.
  6. Top it off with the remaining crumble mixture.
  7. Bake for 30-40 minutes until golden brown and bubbling.
  8. Cool for 15 minutes before slicing into bars.

Notes

These bars are best served warm with cream or vanilla ice cream.
