Pumpkin Dark Chocolate Chunk Cookies

Delightful cookies that combine pumpkin and dark chocolate, perfect for cozy fall nights.

  • 1 cup Pumpkin Puree
  • 2 cups All-Purpose Flour
  • 1 cup Brown Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 2 tsp Pumpkin Pie Spice
  • 1 tsp Baking Soda
  • 1 cup Semi-Sweet Chocolate Chips
  • 1 cup Dark Chocolate Chunks

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the dry ingredients: flour, baking soda, pumpkin pie spice, and salt.
  3. Cream the pumpkin puree, brown sugar, and vanilla extract together.
  4. Add the egg and mix until well combined.
  5. Combine the dry ingredients with the wet ingredients until just mixed.
  6. Fold in the semi-sweet chocolate chips and dark chocolate chunks.
  7. Scoop rounded tablespoons onto lined baking sheets and leave space to spread.
  8. Bake for 12-15 minutes until edges are lightly golden.
  9. Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

For added flavor, sprinkle some sea salt on top of warm cookies.
