  • 1 large egg

  • 1 tablespoon pumpkin pie spice
  • 1/2 cup granulated sugar (for rolling)
  • 1 teaspoon cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the softened unsalted butter, brown sugar, and granulated sugar together until creamed and light in color.
  3. Add in your pumpkin puree and the egg. Mix until well combined.
  4. Combine the flour, baking soda, salt, and pumpkin pie spice in another bowl.
  5. Mix the dry mixture into the pumpkin mixture until just combined.
  6. Prepare the cinnamon-sugar mixture in a small bowl.
  7. Scoop out dough and roll it into balls, then coat each ball in the cinnamon-sugar mixture.
  8. Bake the rolled balls on a baking sheet for about 10-12 minutes.
  9. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
