A comforting dish of tender pasta with creamy, garlicky sauce, rich mushrooms, and vibrant spinach, perfect for cozy dinners.

Ingredients

Scale
  • 400g Pasta (penne or fettuccine recommended)
  • 200g Fresh Spinach (baby spinach preferred)
  • 250g Mushrooms (cremini or button)
  • 3–4 cloves Garlic (minced)
  • 80g Parmesan Cheese (freshly grated)
  • 2 tablespoons Olive Oil (extra virgin)
  • Salt and Pepper (to taste)
  • 1 teaspoon Red Pepper Flakes (optional)

Instructions

  1. Cook the Pasta: Boil a large pot of salted water, add pasta, and cook until al dente. Reserve a cup of pasta water before draining.
  2. Sauté the Mushrooms: Heat olive oil in a skillet over medium heat, add mushrooms, and cook for 5-7 minutes until golden brown.
  3. Add Garlic and Spinach: Toss in minced garlic, cook for an additional minute, then add spinach and cook until wilted.
  4. Combine Pasta and Sauce: Add drained pasta directly to the skillet, toss everything together, and add pasta water as needed.
  5. Finish with Parmesan: Turn off heat, sprinkle Parmesan over the pasta, and stir to combine until melted.
  6. Serve and Enjoy: Plate the dish, garnish with more Parmesan, olive oil, and cracked black pepper. Enjoy your meal!

Notes

Consider garnishing with fresh herbs and serving alongside a salad or garlic bread. For a richer sauce, add cream or nutritional yeast for a vegan option.
